Mouth Watering Combinations…
Certain foods are just made to go together and this recipe delivers on that. Super simple to make burgers with creamy Tzatziki, salty halloumi and a burst of fresh pomegranate. It’s a great evening meal or even better for prepping several meals. Enjoy!
Servings: 2
Prep Time: 5 Minute
Cook Time: 15 Minutes
Bulk Ingredients:
- 500g ground lamb
- 1 medium red onion
- 1 garlic clove
- 1/2 block of halloumi
- 4-6 tbsp Tzatziki
- 4-6 tbsp pomegranate seeds
- 1-2 tbsp olive oil
- Fresh mint leaves
Spices:
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- Salt & pepper
Method:
Start by finely dicing the onion and garlic. Add this with the spices into a large mixing bowl and drizzle in the olive oil. With a spoon, mix together until the spices evenly coat the onion and garlic.
Add the ground lamb to the bowl and, using your hands, thoroughly combine the onion mix and lamb into one ball of deliciousness.
Split the ball into half and then shape into burger pattys on a board.
Place the burger patty into an oiled pan at a medium heat and cook to desired level with a charred out surface.. This will be 4-8 minutes per side depending on the thickness of the patty.
Remove the pattys from the pan and let rest for 5 minutes. Remove most of the excess fat from the pan before dicing roughly and frying the halloumi. Fry until golden brown.
Finally top the burgers. Fresh lettuce sliced, halloumi, drizzle the Tzatziki and finally garnish with pomegranate and mint leaves. Enjoy!
